STEPS FOR MAKING BANANA PAYASAM
To make Banana payasam, first, prepare Almond Paste. Boil the almonds in half a cup of water to peel the skin easily. Once it boiled, let it come to room temperature. Then peel the skin and add the almonds into the jar. Pour a little quantity of milk and blend it into a smooth paste.
Next, chop two banana and mash them with a masher or ladle.
Next, heat 2 tbsp of ghee in a wide pan. Add cashews and raisins. Roast them until they turn golden brown. Keep them aside.
Then, in the same pan, add mashed banana. Saute them on medium flame until the raw smell of the banana goes off. Once the banana is cooked, you can feel the cooked banana smell. Also, the colour of the banana changes slightly.
Once the banana is cooked completely, add boiled and chilled milk to it. Gently mix the banana and milk. Bring it to a boil.
Then add cardamoms. Mix them.
Then add Almond paste. Gently mix them. You can also add cashews to this paste. By adding this paste, the payasam will become thick.
Next, add sugar to it. I have used brown sugar but, you can use white sugar, country sugar (Naatu Sarkarai). Gently mix the sugar. You can adjust the sweetness as per your taste.
Once the sugar is dissolved, add the roasted cashews and raisins to it. Mix them.
Banana Payasam is ready to serve hot.
- You can also add cashews to the almonds paste. This will make payasam even richer.
- If you like, you can add a pinch of saffron to the milk.
- You can use white sugar, country sugar (Naatu Sarkarai) as well instead of brown sugar.
