Carrot Rice is a simple and quick lunch box recipe that you can prepare in less time with minimal ingredients. You can recommend this carrot rice to your kids since the main ingredient is carrot here. You can make this recipe as simple as possible if you are preparing for your kids. Carrots are loaded with nutrients so intaking carrots twice a week is much more healthy.

I and my husband are fond of carrots. So I usually try different methods of intaking carrots into our diet since we buy a lot of them. Carrot Rice is one such method that I tried today and the outcome was delicious. You can have this Carrot Rice with a pickle or pappad. I have used normal Ponni Rice to this recipe but you can use any rice variety as per your wish. This will satisfy your tummy and tastes yummy for sure. Ingredients for making Carrot Rice
- 2 large Carrots (thinly grated)
- 2 bowl of Boiled Rice
- 1 large Onion (Finely chopped)
- 1 tsp Turmeric Powder
- 3 tbsp Chilli Powder
- 1/2 tbsp Cumin Powder
- 1 tsp Mustard Seeds
- Few Curry leaves
- Salt to taste
- Oil for Cooking

Steps for making Carrot Rice
Heat 2 to 3 tbsp of oil in the pan. I used Groundnut oil for cooking, You can use your desired oil for cooking. Then add mustard seeds and once it crackled, add curry leaves to the pan.

Next, add finely chopped Onions and saute them until they become translucent on medium flame so that onions will not get burnt.

Then add grated carrots to the pan and saute them until the raw smell goes off.

Then add all the spices. Saute them well on the low – medium flame until the raw smell goes off.

After sauteing, close the pan and allow the carrots to cook for few mins.

Then season it with salt and add boiled rice to the carrots. Mix them gently so that the rice does not breaks down.

Once you mix them, it will look like this. Check for the salt and turn off the stove. Close the pan and let the carrot rice rest for 15 mins before serving. So that the flavours and spices settle in.

Carrot Rice is ready to serve hot on plate.

Quick Tips
- You can use any variety of non-sticky rice for this recipe. Adjust the spices according to your wish.
- Add salt wisely since you are adding rice to it. Once again check for the salt before you turn off the stove.
- If you wish, you can even add nuts for garnishing.
