Lemon Rice is a simple rice variety that is made by mixing lemon juice. It goes amazing with the potato fries and pickles. This also makes an amazing lunch box recipe for your kids. You can make lemon rice in no time if you have boiled white rice ready.

Usually, lemon rice’s sour taste will differ as per the quantity of the lemon’s juice we use. You can adjust the quantity of the lemon’s juice according to your sour level. I have added two lemons’ juice for 3/4th cup of rice (this is raw rice measurement). It was heavenly when I tasted the rice. Moreover, we will be adding only dried red chillies for the spiciness, so you can adjust the spice level according to your taste.

Many people use to add chopped ginger pieces for the flavour, but I skipped adding them. If you are a ginger fan, then you can add them while tempering. Furthermore, there are so many alternatives like adding chopped ginger, chana dal, fried peanuts and so. All these things will give a nice crunchiness and flavour to the lemon rice. LEMON RICE | HOW TO MAKE LEMON RICE
Equipment
- Tadka pan
Ingredients
- 2 cups Boiled Rice
- 2 Full Lemon's Juice
- 3 Dried Red Chillies
- 1 Sprig Curry Leaves
- 1 tsp Turmeric Powder
- Pinch of Asafoetida
- 1 tsp Mustard Seeds
- 1 tbsp Chana Dal
- 4 tbsp Cooking Oil
Instructions
- Boil the rice and keep it ready.
- Heat oil in a tadka pan.
- Add mustard seeds and let them sizzle.
- Cut the dried red chillies and add them. Let them fry for few seconds.
- Then add chana dal and curry leaves. Let them get fried.
- Next, add turmeric powder and asafoetida. Wait for few seconds so that the turmeric smell disappears. Then turn off the stove.
- When the flame is off, add the squeezed lemon juice.
- Season it with the required amount of salt.
- Pour the tempering ingredients over the hot rice.
- Gently mix them evenly.
- Serve hot.
Notes
- You can also add chopped ginger and peanuts to the lemon rice.
- Red Chillies can be added as per your taste.
- Do not cook the ingredients after adding lemon juice.
- Cooking after adding lemon juice will make the juice bitter.
