Aviyal is an important dish from Kerala Cuisine though it has become a part of Tamil Nadu and Karnataka as well. This is also a special dish in Onam Sadhya that is served with other recipes in the Banana leaf. This is a mixture of vegetables of your choice that are available in your kitchen. This Aviyal recipe goes well with hot plain rice, dal, pickle or pappad.

Usually, there are three variations to make an aviyal recipe. You can use tamarind pulp or raw mango, or curd to get the sour taste. Here I have used tamarind paste and skipped adding raw mango and curd. But you can use your choice of ingredient to get the sour taste and when it comes to adding vegetables, you can your desired choice of vegetables like peas, drumsticks, chow chow and so on. Moreover, I have not added drumstick, yam (Chena kilangu) and beans due to the non-availability of those veggies. But if you have all those veggies, you can add them along with the other ingredients.

Furthermore, I have made this Aviyal recipe a bit thick consistency, so that the coconut paste sticks to the vegetables. So that it will not be in semi-gravy texture, but in a thick consistency that goes amazing with dal or sambar. This is the one I usually make at my home since I and my husband are fond of it. Adding coconut paste and tempering with coconut oil and curry leaves gives the ultimate taste to the Aviyal Recipe. So try this recipe and let me know how it turns out for you.

A mixed vegetable dish aka Aviyal from Kerala Cuisine with coconut paste and coconut oil makes an amazing dish for lunch with Dal or Sambar and Pappad.

Ingredients
  

FOR COCONUT PASTE

  • 1 Large bowl grated coconut
  • 3 Green Chillies
  • ½ tbsp Cumin Seeds
  • 2 tsp Turmeric Powder

FOR AVIYAL

  • 1 medium-sized Carrot
  • 1 Brinjal
  • ½ Bottle Gourd (Suraikaai)
  • ½ Cucumber (Vellarikaai)
  • ½ Ash Gourd (Winter Melon)
  • ½ Snake Gourd (Pudalangaai)
  • 5 Cluster Beans
  • 1 Sprig Curry Leaves
  • 2 to 3 tbsp Coconut oil
  • Salt To Taste

FOR TEMPERING

  • 3 tbsp Coconut Oil
  • ½ tsp Mustard Seeds
  • 1 Sprig Curry Leaves

Instructions
 

COOK THE VEGETABLES

  • Add all the chopped vegetables into the pan along with the curry leaves and add a little quantity of water.
  • Cook the vegetables until it is done. But do not over cook the vegetables.

TO MAKE COCONUT PASTE

  • Meanwhile, add grated coconut, green chillies, cumin seeds and turmeric powder to the mixer jar. Add a little amount of water and grind them coarsely.

TO MAKE AVIYAL

  • Once the vegetables are cooked well, if you still have more water in them, you can drain them. But in the case of less water, you can evaporate them by boiling the water for another 5 to 10 mins.
  • Next, add the coconut paste and tamarind water to the aviyal. Gently give it a mix.
  • Let it boil for 10 mins or until the raw smell of the coconut paste goes on. Season it with the required amount of salt.
  • Once the aviyal is fully done, add oil in a tempering pan. Add mustard seeds. Let it sizzle, then add curry leaves.
  • Pour the tempering mixture over the Aviyal and gently mix them.
  • Aviyal is ready to serve hot.

Notes

  • To cook the veggies, do not add much water, since the vegetables themselves release their water while cooking.
  • The vegetables should hold their shape so do not overcook them. 
  • Aviyal is usually not spicy so I have added 3 chillies but if you want to be spicy, you can increase the number of chillies as per your taste.

Once the aviyal is fully done, add oil in a tempering pan. Add mustard seeds. Let it sizzle, then add curry leaves.
