Brinjal Fry is a famous Andhra recipe with flavourful spices and herbs. Mostly Andhra Cuisine is known for its spiciness. This Brinjal Fry goes amazing with hot plain rice or with rasam rice. This recipe can be made within minutes since it is a simple side dish menu.

I usually make this recipe with a bit of spiciness, but if you have kids at your home, you can adjust the spiciness as per your taste. You can find this yummy Brinjal fry in the Andhra cuisine restaurants known as Venkaya Vepudu.

To get perfect Brinjal fry, use fresh brinjals/aubergine in this recipe. I have cut it into a thin round shape. You can chop into your desired shapes as well.
Then immerse the chopped brinjals in the plain water by adding a little salt. So that the discolouration of the brinjals can be prevented. If you are going to cook immediately, then immersing in the salt water is fine. If not, put them in the plain water.

Brinjal Fry Recipe
Equipment
- Any kind of tawa
Ingredients
- 2 Brinjals
- 1 tsp Chilli Powder
- ½ tsp Turmeric Powder
- 1 tsp Garam Masala Powder
- 1 tsp Cumin Powder
- 2 tsp Coriander Powder
- 1 tsp Chicken 65 masala (Optional)
- Salt to Taste
- Coconut oil for cooking
Instructions
- Cut the brinjals into a round shape and immerse them into the water.
- Then drain the water from the brinjals and set it aside on the plate. Add all the spice powders along with the salt.
- Mix them gently. Let the spices coat well in the brinjals.
- Heat oil in a pan or tawa and gently place the brinjals in the pan. Do not overcrowd them.
- Fry the bottom side of the brinjals until they turn golden brown and crispy soft.
- Then flip them upside down and fry them. Continue these steps for all the brinjals. Add oil in the middle if needed.
- Serve hot.
Notes
- Use fresh brinjals for this recipe.
- Cut them into a thin round shape so that the brinjals will be easily fried.
- I have made them a bit spicy but you can adjust according to your taste.
