Chicken Yakhni Pulao is a flavourful pulao recipe prepared using long grain basmati rice and chicken stock/broth called Yakhni. The Yakhni is a simple stock or broth made using some spices and chicken pieces. Usually, Yakhni is made using Bouquet Garni or a Spice Potli.

Kashmiri Style Chicken Yakhni Pulao recipe is prepared with aromatic Yakhni and light spice powders. This also makes a super-duper lunch box recipe since this is a yummy lunch recipe. You can serve this pulao at any party or occasion that makes a hit recipe for your function. The Chicken Yakhni Pulao is served with any Burani Raita or Tadka Raita Recipe (Spiced Curd with Onions) or Simple Raita garnished with pomegranate.

I tried this Chicken Yakhni Pulao for the first time and it came out well for me. Also, I was struck with the aroma and the flavour of the pulao recipe as this tasted so good. You can also serve this recipe to your children since this is lightly spiced food. Moreover, you need only fewer ingredients to prepare this yakhni pulao as we are not adding any spice powders except garam masala. Traditionally, Kashmiri style pulao does not contain green chillies but I have added them to get a little spiciness. So you can either add or skip them. Ingredients for making Chicken Yakhni Pulao Recipe
For making Spice Potli or Bouquet Garni
- 1 tbsp Coriander Seeds
- 2 small piece Ginger
- 4 Garlic cloves
- 2 or 3 sliced Shallots
- 1/2 tbsp Fennel Seeds
- 1 Star Anise
- 2 small stick Cinnamon
- 1 Nutmeg or 1/2 tsp Nutmeg powder
- 1/2 tsp Pepper Corns
- 3 green Cardamom Pods

For making Pulao
- 1 cup Basmati Rice
- 250 grms Chicken Pieces
- 2 large Onions (Thinly sliced)
- Whole Spices – Cardamom pods, star anise, cloves, fennel seeds
- 1/2 cup Unsour Curd
- 5 small Green Chillies Slit
- 2 tbsp Ginger Garlic Paste
- 1 tbsp Garam Masala
- 3 to 5 tbsp Coconut Oil
- Salt to Taste

Recipe for making Chicken Yakhani Pulao
First, make the Spice Potli or Bouquet Garni. Combine all the ingredients and place them in a clean muslin cloth. Then tie the muslin cloth tightly to a potli shape.

Next, add the cleaned chicken pieces to the pressure cooker and add 2 cups of water to the cooker. Place the spice potli in the cooker. You can season it with some salt as well.

Close the cooker and pressure cook for 3 whistles.

Then, once the pressure released, separate the chicken broth or Yakhni and the cooked chicken.

Next, heat oil in the cooker and add whole spices to it.

Then add chopped onions to the cooker. Saute them until they turn slight brown.

Then add ginger garlic paste. Saute them until the raw smell goes off.

Next, add coriander leaves and green chillies. Saute them continuously for a few mins since the flame is on medium flame. You can adjust the green chillies quantity according to your spice.

Then add cooked chicken. Saute them for a few mins.

Then add garam masala powder to the chicken. Saute them well so that the raw smell goes off.

Next, add curd. Mix gently with the chicken.

Next, add the prepared yakhni/chicken stock to the chicken and bring it to a boil.

Add soaked Basmati Rice once the water boiled. Gently mix them so that rice will not break down.

Close the cooker and pressure cook for 1 whistle on medium flame.

Once all the pressure releases its own, open the cooker. Give a gentle mix.

Chicken Yakhni Pulao is ready to serve hot.

Quick Tips
- You can also add chopped tomatoes to the pulao if you prefer to add them.
- Garnish with fried cashews and raisins or any of your desired nuts if you wish to add them.
- You can also add a pinch of turmeric while sauteing the chicken to get a yellow tint.
