Ghee Rice is one of the simplest and easiest one-pot recipes that everyone can come up with. It can be made for any occasion or at parties for the guests that will make a hit dish. This is a common recipe that is served for either the Vegetarian menu or for Non-Vegetarian. Also, it serves as a quick lunch box recipe for your kids.

When you are serving Vegetarian food, you can serve Ghee rice with dal, pappad and pickle. That makes an amazing combo. In the case of Non-Vegetarian food, you can serve this with either chicken or mutton curry. Some prefer Beef gravy as well. So we no need to worry about the side dishes for the Ghee Rice recipe.

Moreover, cooking ghee rice is the simplest one since it has very minimal ingredients and takes less time as well. - Pressure Cooker
- Tadka pan
Ingredients
TO MAKE GHEE RICE
- 1 cup Basmati Rice Soaked
- 1 Large Onion Thinly sliced
- 3 Green Chillies Chopped
- 3 Cardamom Pods
- 1 Bay Leaf
- 3 Cloves
- 1 Star Anise
- 1 inch Cinnamon stick
- Few Coriander leaves
- 4 tbsp Ghee
- 3 tbsp Coconut Oil
- Salt To Taste
FOR TEMPERING
- Few Cashews
- Few Raisins
Instructions
TO MAKE GHEE RICE
- Soak the Basmati Rice for 30 minutes before start cooking.
- Heat oil and ghee in a pressure cooker. Add whole spices such as a bay leaf, star anise, cardamom pods and cinnamon stick. Let it turn aromatic.
- Add chopped onions. Saute them until they turn to a golden brown.
- Add chopped green chillies. Saute them for 2 mins.
- Add chopped coriander leaves. Saute them for a while. Let the raw smell goes off.
- Add 1.5 cups of water. Bring it to a boil. Season it with salt. Let the water be a bit salty.
- Add soaked rice. Give it a gentle mix.
- Close the pressure cooker. Leave it for 1 whistle.
- Once the pressure is released, open the cooker and mix it gently.
TEMPERING GHEE RICE
- Heat ghee in a pan.
- Add cashews and raisins.
- Let it get fried but do not burn them.
- Once the cooker is opened, pour the cashews and raisins over the rice.
- Give it a gentle mix.
- Serve hot.
Notes
- Do not add more ghee though it is ghee rice. There is a possibility of sticking rice together.
- I have added three green chillies but you can adjust them as per your taste.
- There is no need of adding ginger garlic paste as they will dominate the taste of ghee rice.
