RECIPE FOR SET DOSA WITH STEP BY STEP INSTRUCTIONS AND PICTURES.
Dosa is a typical South Indian dish that is served in all the restaurants around India. There are so many varieties of dosas that are prepared in each region of India. Among them, Set Dosa is one of the varieties that is served in a set of three with Sambar or Chutneys. This is one of the satisfying breakfasts and dinners at most hotels.

Set Dosas are small in size with a fluffy and soft texture. The fluffiness in the dosas comes from the poha that are added to the dosa batter or by the proper fermented batter. Usually, I don’t add poha to the dosa batter since I always ferment the dosa batter overnight. The well-fermented batter will result in soft idlies and dosas.

The ratio for dosa batter I always use is 1:4 (1 cup urad dal: 4 cups idly rice or ponni rice) and 1 tsp of methi seeds/fenugreek seeds. This ratio always works for me well. From this ratio, I get soft idlies and fluffy smooth dosas always. I have served set dosas along with Tomato coconut chutney which is always my favourite breakfast and dinner. Set Dosa
Equipment
- Dosa Tawa
Ingredients
- 1 cup Urad dal Soaked for 1 hour
- 4 cups Idly Rice Soaked for 4 hours
- 1 tsp Fenugreek Seeds Soaked along with Urad dal
- Gingelly oil for greasing the tawa
- Ghee for pouring at the sides of dosas
- Salt to Taste
Instructions
- Grind the urad dal, methi and idly rice separately in a grinder and ferment them overnight or for 8 hours. Then Dosa batter is ready to prepare dosas.
- Heat dosa tawa and grease the tawa with 1 tsp of gingelly oil.
- Take one whole ladle of dosa batter and pour over the hot tawa. Spread slightly into a round shape.
- Once you see the bubbles over the dosa, sprinkle some ghee on the sides.
- Then flip the dosa to the other side once the bottom of the dosa turned brown.
- Let both the sides of the dosa turn golden brown.
- Serve hot with sambar or chutney.
Notes
- Do not overheat the dosa tawa since the dosa might not turn well.
- Grease the tawa with oil each time before pouring the batter.
