Soya Chunks Pulao is the one-pot lunch recipe that goes amazing with Onion Raitha or Pappad. This yummy and spicy Soya Chunk Pulao also makes an amazing lunch box recipe.

Ingredients
  

  • ½ cup Soya Chunks
  • 1 cup Basmati Rice
  • 2 Large Onions Finely Chopped
  • 1 tbsp Ginger-garlic Paste
  • 1 tsp Turmeric Powder
  • 1 tsp Garam Masala
  • 2 tbsp Coriander Powder
  • 1 tbsp Red Chilli Powder
  • 1 Star Anise
  • 2 Cardamom Pods
  • 1 Bay Leaf
  • 2 Cloves
  • 1 inch Cinnamon
  • Few Coriander leaves
  • 4 tbsp Coconut Oil
  • Salt to Taste

Instructions
 

  • Soak the soya chunks in the hot water for a few minutes so that they will become soft.
  • Soak the basmati rice for 30 mins so that the rice will be long grain after cooking.
  • Heat oil in a pan and add whole spices. Let it sizzle.
  • Add onions and saute them until they turn translucent.
  • Add ginger-garlic paste and saute them until the raw smell goes off.
  • Add all the spices and saute them until the raw smell goes off. Let the stove be on medium flame.
  • Add soaked soya chunks and give it a quick mix. Season it with salt at this stage.
  • Add chopped coriander leaves and saute it for a few mins.
  • Add 2 cups of water and bring it to a boil. Check for the salt. Let the water be a bit salty.
  • Add basmati rice and give it a quick mix. Close the cooker and cook for 1 whistle.
  • Once the pressure is released, gently open the cooker and give a mild mix.
  • Soya Chunks Pulao is ready to serve hot.

Notes

  • I haven’t added curd, but if you want, you can also add 2 to 3 tbsp of curd after sauteing the spices. 
  • If you have biryani masala, you can add a half tbsp along with the spices. So that it will give a nice aroma to the soya pulao.
