Tomato Rice is one of the varieties of rice recipes that you can make for your lunch and lunch box recipes for your kids and family. The recipe for Tomato Rice is very simple that you can make it within 15 to 20 mins with fewer ingredients. This Tomato Rice is the easiest lunch recipe that goes amazing with simple Onion Raitha or Pickle or Pappad.

I have made this Tomato Rice recipe with Seeraga Samba Rice. You can also prefer Basmati rice for this recipe. Other than garam masala, turmeric powder and chilli powder, I haven’t added any of the spice powders. If you want, you can add coriander powder for the flavour. But without adding many spices, you will get the exact taste of the Tomato Rice since it has sauteed onions and tomatoes. So try this recipe for Tomato Rice and let me know how it turns out for you.

Tomato Rice
Equipment
- Pressure Cooker
Ingredients
- 1 cup Seeraga Samba Rice washed
- 2 medium-sized Onions chopped
- 3 medium-sized Tomatoes chopped
- 3 Green Chillies chopped
- ½ tbsp Red Chilli Powder
- ½ tbsp Garam Masala
- ½ tsp Turmeric Powder
- 1 tbsp Ginger Garlic Paste
- 1 Star Anise
- 2 Cardamom Pods
- 1 Inch Cinnamon
- 2 Cloves
- 3 to 4 tbsp Cooking Oil
- Salt to Taste
Instructions
- Chop the ingredients and assemble them.
- Heat oil in a pan and add whole spices such as star anise, cardamom pods, cinnamon and cloves.
- Then add chopped Onions and saute them until the onions turn golden brown.
- Next, add ginger-garlic paste and saute them until the raw smell goes off.
- Then add chopped tomatoes. Saute them until they turn mushy.
- Next, add chopped green chillies and spices to it. Saute them until the oil releases at the sides.
- Once the oil is released, add 1.5 cups of water and bring it to a boil. Check for the salt. Let the water be bit salty.
- Once the water is boiled, add rice to it.
- Then close the cooker and cook for 1 whistle.
- Once the pressure is released, gently give it a mix.
- Serve hot with Onion Raitha or Pappad.
Notes
- I haven’t added any coriander leaves or mint leaves. You can add a few of them for more flavours.
- You can also use Basmati Rice instead of Seeraga Samba.
- If you are adding Basmati rice, soak the rice for 30 mins.
