Vangi Bath is a vegetarian recipe that is usually made in South Indian Restaurants. The classic recipe of Vangi Bath is prepared without onions and garlic. But I have added a few small onions since it gives wonderful flavour when sauteed. This recipe is made using homemade Vangi Bath Masala Powder and I haven’t used any store-bought masalas.
This goes amazing with a pappad or any kind of simple side dish. Vangi Bath makes a quick lunch box recipe as well if you have prepared the Vangi Bath powder before. I prepare this recipe when I have fewer brinjals and vangi bath masala powder.

The masala powder I prepared is slightly different from the traditional recipe. So if you have any concerns, you can add or remove any ingredients. I have added chana dal to the masala powder since it gives a nice aroma. The recipe tasted divine when it is served hot along with pickles.
It has no special work to prepare this recipe since you have to saute the brinjals until it is soft cooked. Adding small onions is an optional step. If you are adding small onions like me, then add 10 to 12 of them before sauteing brinjals.

Vangi Bath
Equipment
- Any type of Pan
Ingredients
TO MAKE MASALA POWDER
- 5 Red Chillies
- 2 tbsp Chana dal
- 2 tbsp Coriander seeds
- 3 Cinnamon
- 1/4 tsp Fenugreek
- 1/2 tsp Peppercorn
- 1 tbsp Urad dal
TO MAKE VANGI BATH
- 2 Large Brinjals
- 12 Small Onions/ Shallots
- 1 bowl Tamarind water
- 2 tbsp Vangi Bath masala powder
- Pinch of Asafetida / Hing
- 2 bowl Cooked Rice
- 1 tsp Mustard Seeds
- 4 tbsp Groundnut Oil
- Few Curry leaves
Instructions
TO MAKE VANGI BATH MASALA
- Heat a pan and add coriander seeds and peppercorns. Dry roast them until the flavour comes out. Roast in a low flame to prevent burning the ingredients. Once roasted, keep them aside.
- Roast chana dal, urad dal and cinnamon until the colour of the dal changes to a golden brown. Keep them aside.
- Then add a tsp of oil and roast red chillies. Do not burn them by over roasting. Keep them aside.
- Once they cooled to room temperature, add them to a mixer jar and grind them to a fine powder.
- Vangi bath Masala powder is ready.
TO MAKE VANGI BATH
- Heat oil in a pan and add mustard seeds. Once they splutter, add curry leaves.
- Add in shallots/ small onions and saute them until they turn translucent.
- Then add brinjals and saute them well. Allow the brinjal to cook softly.
- Add in 2 tbsp of vangi bath masala powder and saute them for a few mins.
- Add in Hing. Give it a mix.
- Next, add tamarind water and bring it to a boil. Let the raw smell goes off. Season it with the required amount of salt.
- Add cooked rice and give it a gentle mix.
- Sprinkle some ghee and close the pan. Let the flavours absorb in.
- Serve hot.
Notes
- It is not mandatory to add small onions. But if you are a fan of them, then add a few small onions.
- I have made it a little spicy, but you can adjust them according to your taste.
- Chopping the brinjals into medium size pieces will allow them to cook fast.

Then add brinjals and saute them well. Allow the brinjal to cook softly.

Add in 2 tbsp of vangi bath masala powder and saute them for a few mins.

Add in Hing. Give it a mix.

Next, add tamarind water and bring it to a boil. Let the raw smell goes off. Season it with the required amount of salt.

Add cooked rice and give it a gentle mix.
