Recipe for Veg Noodles – a stirred mixture of healthy vegetables along with the sooji Hakka noodles and a splash of some sauces. This is an amazing vegetable noodles recipe that can be prepared for breakfast or dinner. This makes a super yummy lunch box recipe for kids as well.

I have made this veg noodles recipe using an easily available vegetables in the market like onion, carrot, mushroom, chillies etc. To make it even more healthy, you can add spring onions, cabbage, lettuce, cheese etc of your choice.
Coming to the sauces, I have tossed with soy sauce, green chilli sauce, and tomato ketchup. If you have red chilli sauce, you can add them as well. I have made it light spice noodles but you can alternate the quantity of the sauce as per your taste.

Recipe of Veg Noodles
Equipment
- Any type of Pan
Ingredients
- 200 grms Noodles
- 1 Onion (thinly sliced)
- 1 Green Capsicum (thinly sliced)
- 1 Red Capsicum (thinly sliced)
- 1 Carrot (thinly sliced)
- 10 Pcs Mushrooms (thinly sliced)
- 1 tsp Tumeric Powder
- 1 tsp Black pepper powder
- 2 tbsp Soy Sauce
- 2 tbsp Green chilli Sauce
- 2 tbsp Tomato ketchup
- Salt to taste
- Coconut oil for cooking
Instructions
- As a first step, boil water in the pan and add noodles. Cook it for 5 to 7 mins or as per the instructions given in the noodles packet. Add a tsp of salt and oil while cooking the noodles.
- Once the noodle is cooked, drain the water and set it aside.
- Next, in a pan or Kadai, heat 3 to 4 tbsp of coconut oil and add sliced onions. Saute them until they become translucent.
- Then add green chillies and saute them.
- Next, add all the sliced veggies and stir them for a few mins. Let the vegetables be a little crunchy.
- Add all the spices and saute for a min.
- Add all the sauces and stir for a min.
- Then add the cooked noodles and mix them gently. Check for the salt and add if needed.
- After mixing up, close the pan and keep them for 5 mins. Let all the flavours settle in.
- Serve hot.
Notes
- I have added a very limited quantity of sauces but you can adjust them as per your taste.
- Vegetables can be altered as well. If you like, you can add shredded cabbage, lettuce, peas and so on.
- Adjust the spice level according to your taste bud.
